Goat Chops

I picked up a rack of chops the other day at our Farmer's Market, from Sweet Home Farms. Not having much experience with goat; internet research compared it to lamb, and chops they became. Here they are, trimmed and resting in evoo, lemon, rosemary, thyme, marjoram S & P.



I cut them in pairs, they are petite, defined. That's Calapooia's Flood Stage Red in the glass.

Also layered taters w/ Vidalia slices and garlic

Taters have been on for a while now, chops flipped after about 4 minutes

And how did they taste: fantastic, thank you very much! Melt in my mouth texture, and a more delicate beef'ish flavor than other times I've had goat. Would I do it again? H-e-double hockey sticks yeah! Thanks for lookin'.

PS: Hey look, I figured out how to make my pictures bigger! 'cause bigger is better, right? :)

Awesome plated pic! Looks delicious. Did you cook them like lamb chops? Or did you low and slow them? Goat sounds good!
 
goat chops you are brave. I never would have thought they would have looked that good and taste like you described. Thanks for the post.

Awesome looking meal! Goat is so delish, If you love goat as much as i do you need to try guisado or en sangrita.

They were hot and fast, Nick. About four minutes on the first side, two minutes on the second.
