Fried fish, Redneck caviar, & Mexican rice

made up some of the Redneck Caviar yesterday, I've been eating a bunch of yellowfin tuna (got my 2nd or so box from Restaurant depot last week), and had some leftover Mex rice from a few days ago when I had friends over for kabobs.

the fish was just pan fried in a nonstick, I haven't used my CI in weeks but I'd better break it out. It was seasoned with a lil cajun seasoning from RD too.

Nice cook, Clint! Really like both dinners. The kabobs are beautiful.

Note to self: we need to eat more fish!

Wonder if cucumbers would fit in with the caviar recipe somehow. My wife makes a lot of cucumber and tomato salad with fresh basil and Italian dressing.

definitely. I'd peel or mostly peel them. I mixed in a little feta in one serving & it was OK, tried a little mozzarella on the side on another. More tomatoes would work, I thought I might add some cumin when I first tried it but waited until the next day & the flavor filled out a bit. A little cumin would probably be good (probably my next try), cubed or sliced avocado would be good too I think. I thought I'd only use half a bottle, but ended up using 3/4 of it....wishbone Italian.

....your wife's salad sounds good too....
