Wife ditched me to go to our camper, I'm heading up tomorrow after I finish work. Just so happened that I received my new Craycort grates today too! Decided it was a good time to break them in, so I slapped them on the Performer. Just a simple cook, Chicken Wings for dinner tonight and lunch tomorrow, and I like to multi-task so I threw a Tri-Tip on as well, going to slice it for sandwiches later this weekend.
First got the lump going

I cleaned, dried, and oiled the new grates earlier today, took this photo for posterity. They will NEVER be this clean again!

Wings all seasoned with Mad Hunky - ready to go on.

Tri-Tip lightly brushed with EVOO and seasoned with Montreal Steak Seasoning

I seared the Tri-Tip for 8 minutes with direct heat, then moved them to indirect. Opposite for the wings, cooked them indirect for 10 minutes, and then moved them to direct heat to crisp them up. Left some wings plain, brushed some with Sticky Fingers Carolina Classic and some with Sweet Baby Ray's for some different flavors. Put my Maverick ET-733 in the tri-tip, pulled at 125 degrees.
