Wife ditched me to go to our camper, I'm heading up tomorrow after I finish work. Just so happened that I received my new Craycort grates today too! Decided it was a good time to break them in, so I slapped them on the Performer. Just a simple cook, Chicken Wings for dinner tonight and lunch tomorrow, and I like to multi-task so I threw a Tri-Tip on as well, going to slice it for sandwiches later this weekend.

First got the lump going


I cleaned, dried, and oiled the new grates earlier today, took this photo for posterity. They will NEVER be this clean again!:)



Wings all seasoned with Mad Hunky - ready to go on.



Tri-Tip lightly brushed with EVOO and seasoned with Montreal Steak Seasoning



I seared the Tri-Tip for 8 minutes with direct heat, then moved them to indirect. Opposite for the wings, cooked them indirect for 10 minutes, and then moved them to direct heat to crisp them up. Left some wings plain, brushed some with Sticky Fingers Carolina Classic and some with Sweet Baby Ray's for some different flavors. Put my Maverick ET-733 in the tri-tip, pulled at 125 degrees.

Excellent dinner! Meat looks great!!! Nice new grill grates too. I'll have to order a set for me too.

Question for ya.... do you grill this intense when mama's home? or only after she's split? ;)

Funny you mention that. I do tend to get more creative when she's not around, she loves it when I grill, just she's not patient as I am. She is fine with me slapping something on the Genny and getting it on the table, she's pretty regimented when it comes to eating at a particular time. When she's not around, I LOVE to take my time and cook on charcoal etc. I believe dinner is ready when the meat is done on the grill - not a particular time.

I did eat most of the food, but it lasted all weekend. We sliced the tri-tip tonight and added tomato, cheddar, lettuce etc on some onion rolls for dinner tonight. I did share some of the wings with some co-workers today at lunchtime too. I find I love to cook, but I enjoy it best when other people get to benefit from it!

She's gonna hate it when I bring a 22" WSM home next month - dinner might not be until 8-9 pm!! ;)
 
Great maiden voyage on those grates Jim. Your wings and steak look perfect. That will teach your wife to leave you home alone...
