Today, I mixed up 3 lbs. of ground chuck with my simple meatloaf seasonings. Made an aluminum foil pan to catch the grease. Rubbed a little ketchup on the loaf and got the mini smoker going.
A few shots of the loaf getting happy on the mini smoker. Used some Royal Oak lump and some hickory for a little smoke.
Basted the loaf with some of the drippings.
Getting close now.
And in to the house to rest a while.
Sorry, no plated pics. This one got sliced and vac packed for later meals.
I did sample an end piece or two, just cuz I could!
It was pretty tasty.
