Getting fresh oysters for Christmas and could use a few recipes for oysters in the 1/2 shell (steamed and/or grilled...toppings) and out of the shell...maybe dipped and fried..
 
geeWhiz Chuck, I don't know if I can help you out or not... I buy fresh-frozen oysters just about every weekend and I simply toss em on the WSM for 20 to 30 minutes while I'm smokin something else and they're fantastic.
This photo and this one too where taken just before Thanksgiving when I first smoked em on my Weber kettle. Add a little hot sauce, lemon juice or really anything you have in the fridge... They're Fabulous this way without any messin' around. But then, that's me, I don't fuss with food too much, just cook it an eet it.

Not sure of the details - but if you want to do something "fancy" with Oysters:

Look up a recipe for "Oysters Rockefeller" (hope I spelled it correctly) - then do what one of our local restraunts does:

When you "bake" 'em / grill 'em / WSM 'em - use a smallish jelly-roll pan, and lay down a bed of rock salt, allspice, & cloves. Put your oysters on top of this, & let them cook on top of the mixture. It smells TERRIFIC when you remove it from the oven / broiler / whatever & dish them up!

This would be a super appetizer / snack for New Years / any holiday. Serve with well-chilled bubbly of your choice!

One of my favorite ways to cook oysters is to put the 1/2 shells on an oven broiler pan (the ridges hold the shells). I then drizzle Absolute Citron over them and next add about 1 teaspoon of blue cheese on top. Broil them for about 4 minutes (until edges curl up). They are delicious and the juice left in the shells is great "slurping".

I have never tried them on the grill but I suppose that would work also.

BTW - I have tried plain vodka and with a fresh lemon squeezed and it is not the same.
 
Seems like the last 4 to 6 weekends now, I've been smokin some fresh oysters... and today was no different... I put a dozen for "appeteasers" on the WSM while cookin a rack of spares and a rehead of cabbage... well... they didn't last too long

squirted a half a lemon on em and added some heat from the 'Louzee-anna sauce... then cooled off with a coupla Sammy's

Do they get tender (chewable) when grilled?

I've eaten one (1, uno) fresh oyster in my life, just to say I did it, and must say I don't get it.
Slurped her/him down, didn't gag, but had no desire for another.

But I like the idea of trying some grilled, if you can chew the suckers up.

Yes, tender they get, I do not JUST swallow them... you can add them to a cracker or bisket if you so desire... top them with a sauce or horse radish or a shredded/melted cheese to aid the digestion process (now I'm scaring you again)

I prefer them with hot sauce and lemon juice and ice cold beer.
Eet something else WITH them if you think it'll freak you out.
I've been eeting oysters, mussels, clams and squid for well over 30 years AT LEAST. Love it all, cannot get enough.
When I'm in the coastal states people KNOW where I am when not around.

Reason I'm asking for different recipes is because I hope to have fresh oysters for Christmas/New Years. I enjoy them raw and have dug clams out of the Delaware Bay and ate them while still knee deep in bay water... but most of my family do not like raw oysters and the ones that do like them prefer to have them steamed/cooked with a little topping. ALSO has anyone tried cooking shelled oysters in a muffin pan with any of your previous said toppings? I'm cooking a ham and would like to have a few dozen oysters as appetizers. I have a quart of frozen oysters and I'm thinking of using the muffin pan as a way to help keep everything contained in its own juices with toppings. Sorry about the ramble but I've been home for 2 days because of the winter storm and Christmas will soon be here. Word of Wisdom.. raw oysters are the best...Over steamed/cooked oysters seem to get bigger the more you chew them.

The muffin pan will work fine but do not "stuff" the oysters in - one or two per muffin hole.

I actually have oyster shells that I have re-cycled and been using for about 12 years. I put these on the broiler pan and put the oysters from the quart / pint on top. I have also used some casseroles desogned for snails when I have small oysters.

Where are you in Del? I worked at Seaford three different assignments with Du Pont - and spent a lot of time at the beaches there.

You are somewwhat near Milton where they make the best 90 minute IPA called Dogfish Head. It is one of my favorites!.

Do the Georgetown firemen still put on a big oyster roast / fete in February? It used to be a big event.

Ray, between Dover & Milford and yes Georgetown still has the oyster eat with the same spirit filled individuals standing at and hogging the raw oyster table.

Other than raw with a freshly made red sauce; my favorite oyster recipe is Angels on Horseback. A very simple recipe of oysters, bacon, lemon pepper and the optional jalapeno.

Cut bacon strips in half lengthwise
Sprinkle with lemon pepper
Add a slice of pickled jalapeno (optional)
Roll whole raw oyster up in bacon and hold together with a toothpick.

Grill direct over medium heat until bacon is crispy.

Serve immediately. If you have friends who don't like raw oysters, they'll surely love these. They're firm and have a nice smokey flavor.

- been there / done that. For those of you on the board that do not know about this event, the firehouse had one wall with about 20 taps for getting your draft beer. One price to enter - all the beer you can drink and all the oysters you can eat and a ****ed good fiddling band! Good memories!

In my younger days, I went down to Pensacola - to visit my brother, when he was on Spring Break.

Places on the beach ("Pink Palomino" back in about '89?)

Had nice, fresh, raw / lightly steamed oysters, & washed 'em down with lots of green beer! (their break coincided with St. Pat's)

Ray </div></BLOCKQUOTE>The oyster eat is a guys only event...the ladies only event is held on the same night over in the resort area about 15 miles away....and from what I hear what happens at the resort stays at the resort.
