Fresh Cut Pork Rib Chops

earlier this week, i phoned in an order for some fresh baby backs from my local meat service, Harry Hansen's.
Then, a few hours before i picked-up, i added tonight's dinner to the order.

a few nice pork rib chops, seasoned with Blues Hog Barbecue Rub.

have the last of my Sweet Baby Yams ready... those will sit in an oven at 375º until beautiful

The chops, on the 26"OTG direct for two minutes a side . . .

then away from the heat until...

PERFECT!

...and, this chop was!

Thick, juicy, packed fulla flavour... Holey Moses! It don't get better than this, man!

Best Daggum Chop I've EVER had!! and I've Had MANY!
