Four butt cook tonight


 
Hi,
I'm putting up four butts for a work gathering tomorrow. This picture shows my herbs and spices before being thrown together. I use a "shovel" method - I buy at the Bulk Food Store, and have my quantities by shovel rather than weight or size, eg., 4 of paprika, 2 of chili, etc.

The advantage to the shovel method is speed and convenience. Buying at the bulk place saves a bundle. The two bottles of Ancho Chili I bought cost the same as everything else put together. The whole bowl cost $24.

Of course, now it's raining and I'm feeling flu-y, but life's like that.
 
Wish we had Bulk Barn down here. Three big things I miss from my Toronto days: Bulk Barn, Swiss Chalet and milk sold in bags! I'm surprised there isn't more of a BBQ interest in T.O....it is known as Hogtown, after all!

Well, it went really well... hardly any rain, and none my patio umbrella couldn't handle. First, of course, the site inspector had to check that everything was hunky-dory...

At 6 am, the butts looked like this - put some more fuel on and went back to bed.

and the next step is pulling and eating.

As for the butt, well... seen one smoked butt you've seen them all.
Most important is it's flavour and the enjoyment family & guests get from it.

I have one of those site inspectors as well. They also second as a vaccuum when pulling pork when it hits the floor! Vince
 
yes, the hairy vacuum cleaner does a great job of cleaning up! The PP was, ahem, greatly appreciated, and a great deal was heartily consumed.

I lightly sauce when it's pulled, and then put more sauce out as an option. The flavour was very good, using my own rub which is virtually a version of Kevin K's. Thanks for the company while I did this!!
