Like everyone else, I am looking for cheaper cuts to make ends meet. I really love the flat irons. I cut out the big tendon that runs through the middle. I drizzled in oil and covered with house seasoning.



All of the players. I used a small amount of peanut oil to grease the pan/griddle.



Once again, I used my cast iron pizza pan as a griddle. Action shot of the meat on the grill.




Flipped the meat every one to two minutes for an even cook

Almost done, I cook the meat until an internal around 125 F



Meat rested and sliced...

So I have never used a flat iron, what does that do for your cook that being on the grill wont do?
 
The flat iron is the cut of beef steak. You can cook them directly on the open flame or on a griddle. Either way, they turn out great. You will get a better sear on a cast iron pan or skillet. I like using this cast iron pizza pan as a griddle. If you set up for indirect cooking, you can put the pan over the hot fire. But, you still have enough room to move the meat to the other side if it is cooking too hot. I recommend flipping often and checking the internal temp closely. Once they start warming up, they get done quick.

Good stuff, Boss! I love flat irons -- they have great bang for the buck in terms of beefy flavor and tenderness.
 
I love them flat irons but I have a hard time finding them. Your dinner looks great but what is the ketchup for?
