First WSM Cook and DAMN I love charcoal!

Hey gang.
just recently picked up a 22 in WSM a few weeks ago. Went together nicely.
Only modification was a grommet hole for probe temperatures.

Both cooks resulted in awesome spare ribs and brisket. I could not believe the flavor.
I've been smoking on a gas smoker which shall remain nameless. Picked it up at Walmart and although the food that came out of it was ok (meh) ..it just wasn't anything like what I got out of the WSM. Even the wife commented on how great the flavor was.

Kicked the old gas smoker to the curb.

I did have some trouble keeping temps up during both cooks. The wind was 7 - 9 and around 47 deg. I think the cool air was blowing the heat away or poor vent management.

I was able to maintain the temps by checking on it frequently and opening dampers every so often. I'm hoping that the longer I use it, the more airtight it will become.

Sorry, no pics as we ate everything within minutes - family was hungry!

I'm doing this again and again and again and ............

So I've been lurking on the site for a few months. Learned a lot and will continue to do so thanks you fine folks.

Gotta go...need more charcoal

Beer can chicken for this weekend. Got a couple of 7lb ones that should work.
Never done chicken before so it should be interesting.

Chicken is awesome as it doesn't take that long AND it's cheap. My only advise, go easy on the smoke wood with birds...
 
Glad the WSM is working out for you. Of course, we really don't know if you have a WSM because there are no photos to prove it. You see, no photos = it didn't happen. LOL Welcome aboard ...we look forward to your cooks.
 
Dwain, he may not have pictures but when someone from Gastonia says "they picked up" something then he probably does have one, don't know who it belonged to before he "picked it up" but yeh, he's probably got it.:rolleyes: hopefully he knows I'm just fun'n him Welcome to the obsession neighbor you made a darn good "pick up"

Don is correct. I picked it up and ran like hell! Good thing the serial numbers on these are only two letters!

I purchased, some Cherry wood. All I could find. Was thinking 3 fist sized chunks.
I'll go easy with the smoke and hard on the home brew.

My $.02 on your comment about keeping the temps up....

I'm assuming you're talking about the dome thermometer? My dome thermometer is 50 degrees off from the grate temps I read on my Maverick ET-732
Maintaining 225/250/275 has been a lot easier once I quit using the dome thermo and just watching the Maverick

Welcome to the WSM club. You'll have a difficult time going out & enjoying BBQ ever again. lol

I was monitoring with a Maverick ET-732 on the grate and full hot water in the bowl. Used the Minion method with full charcoal.

I know I'm no where familiar with how the WSM behaves and just chalk up my heat problems due to user error and the unit being new.

I think part of my problem was cooking in an area where the wind is channeled between two buildings and it was fairly winder and cool that day.

Gives me an excuse to keep at it :)
