Todays the day to fire up my Christmas present. I'm going tontry the beginer recipe for pulled chicken from the site. I rubbed the split chicken with Dinosaurs spice rub last night. The recipe instruction say not to use any water in the pan. Is this common for chicken? From reading a new WSM runs hotter first time. Should I be concerned?
 
You want to do chicken at higher temperatures which the use of water inhibits. Just follow the instructions and you will do just fine.

Came out awesome! Very, impressed by the 14.5. Temperature stayed and about 325°. After the cook I shut the bottom vents and left the top open. It's been maintaining 250° on chilly, breezy day.
