Hi everyone! A slab of beef ribs is the order of the day - and my first time using the snake method. KB and apple. The ribs oiled, rubbed with Szeged Steak rub and extra ground pepper.

A couple hours in, I just had to peek

The ribs were on for about 4 1/2 hours. I must have had a kink in the snake, the fire crapped out before the last third was bunt. So, I fired up some more KB in chimney, problem solved. Slathered with Jack Daniels Honey Smokehouse sauce.

and plated w/ cucumber salad, grilled onion & corn and the green salad


They were some tasty ribs. Cindy thought they were over done, oh well
