Hi all, this was my first smoke and also my first post on here.
I smoked 3 racks of Baby Backs (and some jerk chicken)....had a little trouble getting the temp up to 250. In total, they were on for about 4.5 hours.
I didnt touch them the first 3 hours, then every 30 or so i sprayed them with a little apple juice. Sauced them at the end with some Sticky Fingers sauce. Was really happy as they were tender but had a little give when ripped.
