Fred, congrats on the ribs!

Regarding the foil, IMHO, forget about it next time too, unless you're cooking hot, without water. I foil across the top of the dry pan to catch drippings in that case.

What did you cook on the top grate?

Agree totally. My water pan looks like the underside of my OTG lid. Never saw the need to keep it clean.
 
Thanks guys. I cooked some ABTs on the top some with jalapenos and the others with Anaheim peppers, they were awesome.
What would you recommend for the next smoke? How about a brisket?

Why not? Go for it. You'll only cook one for the first time once. Cooking a brisket is a good experience and not hard to do. Plenty of info on here.

Super, Fred!

Sounds like you really did a great job, especially for a first cook on the wsm. I plan on rolling and skewering next time I do any ribs on the bottom grate as well.
 
You guys are killing me. I'm dying for ribs (looks great)! I do, however, have roadside chicken thighs on the OTG as we speak. Heh.
