First smoke on the new WSM

I am firing up my brand spanking new WSM this frigid morning here in northern lower MI. The ambient air temperature as I type this is 1 deg F, with a high supposed to be 20 deg F. The wind is calm however, so I am hoping to be able to maintain 250 deg in the WSM. :D

I have a 5# beef brisket salted and peppered, and a 5# pork loin that was marinated overnight in the refrigerator.

Does any one have some suggestions to help with my first smoke this cold morning?
 
I recommend not stressing over the temps if they move. Let the cooker rise and fall as it sees fit within a range of say 250* plus or minus 25* to 30* or so. The first few cooks may be kinda temp crazy but after a few cooks it will become easier and easier. Don't be afraid to try whatever works for you. Most of all -- have fun (aka the chair, some beer, and keep outta the wind). Look forward to the photos.
 
Welcome to the site mr mask. Enjoy that new cooker, it want know the weathers there. Good luck and post pics. I want to try both of those soon so let us know how it goes.

It's a shame to get a nice new and very clean WSM dirty with smoke, isn't it;) But that's its intended purpose, and it looks like you and the WSM did a fine job with the brisket and tenderloin!
 
Looks great! I noticed you foiled the water pan, did u run it dry without water? If so, how'd it turnout. I've been tempted to try and cook brisket like that just nervous the meat will turn out dry.

I live in the norther part of the lower peninsula of Michigan. It was 1*F when I started yesterday, 6 1/2 hours later it was a "blistering" 18*F. I feared I would have had trouble maintaining temps, if I had used water. I have heard that the primary reason to use water is as a "heat sink" to help keep temps down.

The brisket was still good.
