I fired my new 18.5 WSM up today for the first time! I recently purchased my wsm after months of research, reading this forum, and watching countless youtube videos. The Weber arrived at the beginning of last week so it has been really hard to wait to smoke something. I bought two racks of spares yesterday afternoon and started the smoke around 8 this morning. The overall time from start to finish lasted just under 5 hours. I smoked the ribs at 225 for a little over two hours, foiled and added apple juice then smoked another 2 hours at 250. I then sauced and they went back to the smoker for around 20 minutes (ambient temp of a windy 41f at the start of the cook to a calm 53f at the finish). I also purchased the bbq guru diqiq 2, I can't say enough about the performance of the guru today. I couldn't be happier how the ribs turned out today, never would have guessed the first attempt would have went so well. We had baked beans and my wifes famous mac and cheese as sides. This was the first time I have ever smoked anything, couldn't be happier at the results.
