I managed to snag a 22.5 wsm off of the Houston craigslist for $150 (sorry to any of you who were trying to get your hands on it too).
My way of cleaning out a used wsm... Fire in the bottom and on the middle grate!
I'd say it got pretty hot...after it cooled, I scraped out all crust with little effort
None the less.. Here are the beef ribs!
Hitting the cooker! Dry water pan with a couple chunks of oak for smoke.
Smokin' away!
And done!
They came out pretty good for a first time cook.
