Fired up my new 22 wsm last weekend and it was a hit. It was just me and my 9 year old for the weekend but I had to break it in. Smoked up some baby backs for dinner saturday night and a butt for sunday. Started it up ~115pm Saturday using minion. Things got up to temp REALLY quick, alot faster than I thought it would so I was scrambling around and forgot to foil the underside of my water bowl. I put both the butt and ribs on the top rack as it started smoking like crazy.
This is my first time smoking anything so I just used the "Renowned Mr. Brown" recipe for the butt and 2-1-1 for the ribs. The ribs I slathered w/No. 5 sauce ~5pm and took off ~530pm and the little one and I wore them out. She likes fall off the bone ribs which is how they turned out so needless to say they were a hit w/her.
The butt I kept on and sprayed down / flipped ~9pm. Kept an eye on it for the next couple hours and went to sleep. It hit a plateau of 172 for a bit, but at around 3am was at 192. I noticed the smoker was running under 225 (on the lid) so I opened up the bottom all the way and noticed the fuel was almost completely gone. I sprayed down the butt again and double foiled it. Left it on until 6am and noticed the internal temp (probe went in like butter) was at ~175 and the charcoal had burned out. I figured sometime soon after 3am it had burned itself out and considered from about 4am to 6am its 'resting' period.
The family was very happy w/the PP, so much so that they even like it better than our favorite Q joint. Not to mention we get about 4 times as much for around the same price. Hooked it up w/some No. 5 sauce.
I got the ribs and shoulder from Costco (I picked up a packer too for this weekend), all in cryovac. I read somewhere on this board that Costco baby backs come packaged w/the membrane already taken off. The ones I picked up looked like it still had a membrane on it, but I could not get it off for the life of me. I think they were 'Swift' brand, so if anyone knows if they are already taken off please let me know. I have bought the same ribs from Costco in the past (cooked on my gasser) and have only once been able to get the membrane off fully.
