Hello,
Last week I picked up an 1880: HERE
This is my first cook on it and my first smoke ever. I decided to keep it simple with a deboned 8# butt. The cook took 11 hours and the WSM cruised along at 225-250 deg. most of the day. I had to add some charcoal for the last hour and half, but otherwise it was simple and fun. The results were pretty tasty considering my first cook. Thanks to TVWBB for all the resources to make it a success, and my gf for helping with the cook!
