First Ribs......Awesome!

Did my first ribs on the 22.5 yesterday, went on at 11am and smoker held a temp of 250, did the toothpick test at 4:30 and it went in and out easy. They had a rub but that was it, no basting or wrapping and family devoured them all. Smoke used was 4 chunks of apple and I was quiet pleased with the results.

I'll bet they did! Those ribs look perfect. Great job, Dave!! Can't wait to see what's next.

Look at the "pull-back" on the top one but not on the bottom one. They'll do that, it's just proof that every piece of meat is different.

Monty, they are St. Louis cut, wish I'd bought more from Costco....look's like another trip back is called for!!
