Just writing my first thread and wanted to say thanks for all the great stuff I have learned in the last few months on this site.
I purchased my WSM 22.5 a couple months ago and have just been getting my feet wet with some simple rib and chicken recipes. So last weekend I decided to step it up and try my first pork butt. I bought an 8 lb bone in shoulder and took the plunge. I just found a DIGIQ and was going to try it out for the first time. I started my cook at 10pm and set my DigiQ for a 225 degree temp. In hindsight I probably should have read the directions more carefully. I also used my maverick so I could keep an eye on the temperature when I went to bed.
The temp stayed around 250 and I couldn't figure out why it was raising so much. I had all the dampers closed except for the top one. By midnight it seemed to be staying around 250 so I went to bed and hoped for the best. it was a nice night out so we had our bedroom window open. Our house backs onto other homes so most likely our neighbours would have their windows open as well. At around 1am my wife woke me and told me that she could hear an alarm going off outside...Uh oh....I went down and checked on the DIGIQ which showed a temp of 280 degrees! Ah crap...I played around with it again and finally realized that the fan portion of the DIGIQ had a piece that you can close off half way to 3/4 closed. I went back to bed and was very paranoid that the alarm would go off again. I don't have children but this is probably the closest I could relate to a parent listening to the baby monitor and waiting for their kid to start crying. It was around 2 am now and the wife was not digging me obsessing over the temp of this piece of meat. I felt bad for her and told her I would understand if she wanted to sleep on the couch.... She didn't find the humour in my joke and I finished the one eyed open sleep on the couch.
By morning the temp of the meat was coming up nicely. It ended up cooking for 12 hours, I wrapped it in tin foil and a towel and tented it in a cooler for a couple hours. After pulling the pork and adding some sauce, it turned out pretty good for my first time. I included a few pics. (none of the couch)
