Week 2 of my 3 week paternity leave, my goal is to cook something on the WSM once a week while I'm off work... Last week was baby backs, today I gave PSB a try... Actually mine doesn't qualify as true PSB since I didn't use a stout, instead I used one of my home brews, a standard american brown ale. I also only used 2 jalapenos that I seeded, my wife is not very tolerant of spicy foods. Anyways, as pretty much every other person who has ever made this reports, this was an insanely delicious and easy dish. I was hoping for about 6 hours total but it ended up taking 7, I hit a major stall at 155, I ended up keeping it on the smoker for 3:30, then foiled and put in oven at 375 for 2:45, then after shredding the beef back in at 375 for 45 minutes to reduce the braise.
