first go round with the new WSM

well, here we go!! Its 23f outside, and its sunny, sounds like a great day to break out the new smoker! Threw on a nice pork butt and even saved the fat cap to smoke for my BBQ buddy, my dog Murphy. New WSM is running a little on the hot side even with the bottom vents @ 25%, but just gonna keep and eye on things and wait for the results. Also going with no water in the pan to experiment.

Throw in a snowball in dat waterpan if you wanna keep the temps low. Looking forward to the pull picks...Or even when Murphy get his treat
 
going pretty well 1.5 hours in. Bottom vents #1- closed, other 2 @ 25%, top vent WFO. little breezy, 26f outside, and running about 275f. time to have a few beers and watch some hockey.
 
My WSM ran hot the first couple of cooks, soon it will be all "gooped" up and will settle in. Murphy looks like he would chew my leg off it I got too close to his dinner. Robbie....just sit back and enjoy in a few hours you will be able to go outside and smell this great cook.
 
well Im just passing 5 hours, and the light breeze from the morning has turned into a pretty windy day. really went thru the charcoal and had to fire up a small chimney full and got things back into cooking range rather quick. wishing I had a wind break, or just no wind. But on the flip side, I have spent more time in the back yard of our new house today, than I have since we bought it. we moved in right before Thanksgiving, and it snowed moving day and never stopped......I've been dreaming of this day! Temp the meat is into the 170s, so I am getting there.
 


Turned out great! Got a nice bark but not the bark iv see on some of the pictures here. But was still damn good!
