Poured down rain, so I had to improvise.

2 slabs of St. Louis styles. One rubbed with Byron's butt rub and one with a homemade rub.

Pulled after 3 hours and foil wrapped.

Sauced and back on for 30 mins to set the sauce.

They tasted great, but from what I have seen on the BBQ shows, they would be marked down for being over cooked. They fell off the bone pretty easily.
 
Excellent cook!! You have to watch those suckers when you foil. I just did a rack of St. Louis Spares, 3 hours on smoke, I foiled, an they were perfect in 20 minutes!!! This was a smaller rack, but 3h 20min. The two racks from the day before were overdone at 4 hours, they tasted great but were FOTB, overdone.
