First crack at chops

So I came across some bone in centers and some bone in thin cut and a pack of country style ribs. Thought I would make a few pre made meals for lunches this week.

I marinated the thin cut in Wickers and I brined the ribs and chops in a simple brine. Oh and I brined my liver with this.



Salt and pepper on the thin and gave a modified Willy's rub to the ribs and chops



Threw on some taters, some corn and I cut up a bell pepper and coated it with oil and beef rub



Chops are about done



Country ribs need a little sear - this was my first time attempting country ribs and I have to say I was pleasantly surprised. Maybe the brine, maybe the rub but they were awesome. I only cooked them about 5 or so minutes per side and went for "feel" to see if it was done. Gotta get me one of those instant read thermometer.





The pork chops were just as good. Perfect amount of brine/rub/cooking time. They tasted so good. Used a little bit of Porky's BBQ sauce and I really like this sauce.

Whats better in a kettle thats full of pork and fresh corn on the cob??......NOTHING!!! Everything looks fantastic!!
 
Looks great! I always feel obligated to use every last bit of heat for something productive, so loving the full meal on the grill!
 
Fantastic cook Chris, a man after my own heart with the brining you just cant beat it for flavour & tender meat can you.
