First Brisket

In the middle of my first brisket cook. Put a 12lb whole brisket on at 4am and have been running 240 at the grate. I'm already up to 153 on the meat. Does that sound right given that I'm less then 2.5 into the cook?

I'm thinking my probe might not be in correctly but don't want to open up to check...it was a little dark this morning and I was trying to get everything setup using the flashlight from my phone. Thoughts?

You're fine. I'm sure by now you've noticed that it's stopped climbing as you're probably entering the stall about now. You'll be amazed at how quickly it climbs, and how slow your last few degrees can take.

Thanks Mike. I have to be in the stall right now. Last hour only went up 3 degrees. Currently at 165 - 5.5 hours in.

Wrapped at 170 and brisket ran up to 190 in an hour. Doesn't seem like it could be done this quick - only at hour 7. Thinking I'll give it atleast another hour before probing.

the last brisket i cooked was similar in three hours it was already getting into the stall and i was thinking "what the heck this things gonna be done way too soon"......and then 10 hours later it was done
