Hey ALL,
Quick question. I've got a couple of old trees in the back yard that have lots of dead branches.
I think they are either Elm or Ash trees. I'm in the process of finding out which. But in the mean tme..... would either be ok to use as fire wood in the smoker?

Mornin Jim, According to this article, Maple is like fruit wood and gives a sweet flavor that is excellent with poultry and ham:
Smoke Wood

HTH, and congrats on your new purchase ~ You're gonna love it, I guarantee

Could I use a combo of maple and hickory to mellow out the hickory flavor a bit??

Something to keep in mind is that, I believe, there a bunch of different types of maple: the "acer" family. We had maples that grew in So. Cal which I'm guessing are far different than the kind grown in the northeast and Canada that produce pancake syrup. But they were truly maples. And the japanese maple, acer palmatum, resembles marijuana. My guess is that when people are talking maple, they are talking about the syrup producing type(s).
