Fire when out over nite please help


 
Jr,what was the outside tempurature? If the outside temps weren't too warm,you should be okay. Just refire the cooker,and keep going. In the winter,this shouldn't be a problem. The internal temps of the meat should be ok.
However,if you are concerned at all,throw it away! No sense taking a chance on food poisoning!
 
i would toss the butt and make some brats or something.

edit. was the smoker temp or the internal butt temp at 50? if it was the butt, do you know what the internal temp was when you fell asleep and how soon after falling asleep did you awake to find the fire out?
 
i woke up and checked it about two hours ago and the smoker temp was 225 then whent back to bed and found temp at 50 degrees and the temp outside is about 15degrees
so should i just start the smoker back up
 
Re-fire that muther and cook on! It's happened to me before and last night, even with Wicked Lump and the Guru Nano, it was hard to keep the Kamado Joe at target with air temps in that same range.

I pull mine at 195 and foil and wrap in a towel and put it in the cooler for at least 1hr.
Most time I leave it in the cooker for 2-3hrs.

So at one point it was 225º and then 2 hours later it was 50º, right? If so, no problem.

It didn't drop to 50º instantly. Assuming a linear fall in temp, the temps weren't below 135º for more than 58 minutes.

Also, how long had the butt been cooking at that point? If it's been many hours, any surface bacteria has been long gone.

So ... keep going!


I target 200º but start testing about 190º.
