I put a 18# brisket on my WSM at roughly 7:00 last night. At midnight the grate temp was 220° and the brisket was 112°. Woke up at 6, and my Thermoworks thermometer turned itself off overnight. When I turned it back on it showed the grate temp was 130° and the brisket was 118°, so my fire went out.

Opinion needed - is this brisket safe to keep cooking or does it need to be trashed?
 
Keep plugging away. Why on Earth would you trash a still cooking 18lb slab of meat??
