Finally reached rib perfection

After a year of smoking I think I found the perfect recipe. I started with bb ribs from the local grocery store and Costco. They were okay, finally tried Iowa Gold brand ribs from butcher, much better.

I put a dry rub on 3 hours before, i use obie-cues sweet hot rub. I smoke @ 225-230 for 4 hours. 2.5 hours in I put honey and brown sugar on both sides. 3.5 hrs in I put on some rufus teague honey BBQ sauce. I used 4 fist sized chunks of cherry. They were just awesome sweet and spicy.

I used Harry's recipe but modified it not to foil so I get a Better bark. Out standing!

Every time I think I have something perfect my Son-in-Law sits at the table and fills up. The whole time he talks about how good the meat is then he'll look at me and say "Dad, it's almost perfect but you need to keep practicing", and he smiles. It's become a ritual.
