Wow. Amazing!!! That's a work of art right there. Love those Asian flavors. So interesting to do it with a brisket.

Outstanding looking sandwich! The bark on the brisket looked great.

I went a lot longer than I normally do before foiling. I tried to keep temps down and go longer to see if I'd get a tighter bark. It worked out well, but like a said before, it cooked fairly unevenly.
