Father's Day


 
Well, I got elected to host the family Father's Day celebration. We'll be hosting about 10 adults and 10 kids.

I want to try something different. Any ideas?
 
I'm doing Bobby Flay's Maple-Horeradish Ribs for Father's Day. They're a crowd favorite at my house and they'll be even better this year since this will be the first time they're being done on the WSM. They're a nice depature from the 'norm' too.

I will of course, be following the traditional cooking methods on the WSM, rather than basically grilling them as BF says on the recipe. I wonder what type of smoke wood I should use. Anyone have any suggestions?
