3lb roast indirect on the kettle at about 350/400 for 40 minutes or so until 122 degrees. Salt, pepper and a little granulated garlic. Seared on all sides 1st. It rested about 30 minutes loosely tented before slicing. I'd pull it next time at 115 or 118
A little more medium than I would have preferred but still yummy
Sliced real thin
On a nice hunk of French bread with horseradish sauce and melted provolone. Also served with French onion soup and a salad
