Enhanced Chicken Question

I have some chicken thighs that I purchased from Costco. The package says "With up to 7% water retained from chilling process."

Does that qualify as "enhanced" meat? I have cooked with it a few times and it tastes just fine.

Could mean the ice glaze they use. I've seen that on boneless breasts, and they have to attribute it on the package.

Try air-chilled chicken if it's available. Better flavor and better texture, imo.

Thanks Chris, that's good info.

How would you find an air-chilled chicken? Lots of the chicken I buy is just packed at the grocery store and doesn't mention either water retention or air chilling. Is it safe to assume that most chicken is water-chilled, and that air-chilled chicken would make a selling point out of it?
