For the holidays, I wanted to do something special for my co-workers/employees. I've got 25 and buying them all something nice wasn't feasible. So I invited everyone over for a post-holiday get together. Had about 15 employees and their guests come, and was happy to be able to treat them to something special. They work their tails off, and the holiday season in the retail/restaraunt market can be crazy. Here's lots of pics as it took a day or two to prep everything so that I wasnt grilling the whole time they were here.
I call them Hawaiian skewers...pineapple, pork chunks and white onion. Marinated in Lawry's sweet and sour sauce.
Pork Loin brined overnight. Seasoned in EVOO, "Wild Game Rub", with pepper and garlic powder added. Tied to keep shape tight, about 1 hour at 300 on kettle. No sear. Chilled overnight and sliced for sandwiches. Best compliment was hearing, "This is so moist and well-spiced, it doesnt need any mustard or condiments at all."
My wife added a nice surprise here at the last minute. Red potatoes diced about 1 inch around, bacon cut to 1/3 slices and wrapped. Baked in oven for 15 minutes at 400*, flipped and get about 10 more minutes. Served when not too hot.
Everyone was well-fed, had a great time socializing outside of work, and lots of leftovers for my family for awhile. Had about 10 people bail at last minute.
