My buddy's son got his first elk this year, he got the idea to make some Philly subs. So I smoked this part of the rear quarter in pecan wood after letting it marinade overnight in some stuff I threw together. I let it go to 140it then gave it a little sear.

Some bell peppers and onions in the ci. Salt and pepper.

Add the meat back in.

Throw it all on some toasted buns, a little mozzarella, and in the oven to melt the cheese.

Man that had to of been one of the best sandwiches I've ever had the pleasure of eating.

S I have not had Elk for fifteen years since I got mine. You just crushed me Man. Love that meat and love what you did with it, beautiful
 
Looks awesome! I know in some festivals around here they serve Elk gyros in pita(with the ordinary sides) but they add som lingonberryjam in the mix aswell. i know it goes great with any game meat...Not sure i could fit that into you Sandwitch though :cool:
 
What a fascinating approach! Unfortunately, my hunting party was only able to get a relatively scrawny four point that was only suitable for sausage. Maybe next year!
 
Elk Sammie's look super..I have not had elk in a bit but it's one of my favorites for wild game!! You did it up perfect!! Nice work!
