I marinated some flank steak in a Chinese BBQ spare rib recipe, grilled a slice, liked it so I made it in to Egg Foo Young (saw a recipe online). I liked it so much I did it again & made 2 more of them.

In St. Louis they have an egg foo young sandwich. Litterly egg foo young between to slices of white bread. And of course it has a name St. Paul's sandwich. No relation.
 
Looks really good. How did it turn out?

Very good! The first one fell apart, the instructions called for high heat for >2 minutes but I was afraid it'd burn.... the first one was a scramble, the 2nd two Oh Boy... light, fluffy, I'll definitely do it again, & probably even try some regular omelets in the wok.. I'm really enjoying this Chinese cooking.../stir fry... right now I'm chomping down a freehand attempt at Orange Chicken --- not too shabby

You don't need a wok to do this, I was thinking maybe 5-6" Cast Iron pans would work. I guess they would but what about the flip.
