Easy halibut!


 
Another great cook, Morgan! And a great pic. I love halibut (both eating and catching!) I have only had the pleasure of fishing in Alaska once, and it wasn't a great trip for the 'buts. So most of the ones I've caught are the smaller California halibut. I would love to get back up there, but the airfare is a mother!! I live near San Francisco Bay, so I have access to a lot of great seafood.

Anyway, great job and great looking food.

What a delicious looking cook, Morgan! May I impose a few questions about your fish cooking? I have some lingcod in my freezer that I caught while in Homer, AK. The stuff is meaty and thick like your Halibut, so I'm thinking your method would work for preparing it. But I'm curious - you "grilled" the taters, then sort-of "steamed" (or braised) the fish by having it in the foil. Is there any reason you decided against grilling it direct for a "sear" and then finishing in a braise? Also, I've been following (with great interest) Mr Lampe's rotisserie basket cooks and I was wondering if that might work for some fish filets? My main thought/concern with cooking fish is that I would like to make it "crispy" or have a grilled texture to it; but I don't want to dry it out in the process. I'd be very grateful for your thoughts, Sir!
 
Hi Mickey! I only did it this way cause I had been busy all day and wanted a easy cook(which turns out I still overlooked it) ling cod is good stuff! Try small chunks first on a well oiled grill... You could try wrapping some small chunks in bacon as well(like the scallops I posted earlier). If you have a bit try the beer battered tacos to! Trust me you will not regret it!

That helps a LOT, Morgan, and I sure appreciate it! I know it seems obvious to you, but I hadn't thought of trying smaller chunks first. Just assumed I should grill the whole filet, but cutting it up would let me try a few different things until we get something that works right. Thanks for pointing me in the right direction! Son's birthday is this week, so Prime Rib is my next cook (per request), but I have a feeling there will be some lingcod done here soon too. Hope you have a great week, Sir! -Mickey.
 
Man that looks good! A chunk of halibut that size would cost $50 here...but I'm sure the cost of running your boat being considered it isn't that cheap up in Alaska either.
