Easter Kielbasa & Rib Chops

A beautiful Easter Sunday in Raymond, did some yardwork, ran in and outta the house to catch some of the Masters (I did see the double eagle)...

..and while doing other stuff, a few Kielbasa were smokin' on the Ol'Red in the PV.

These sausages were smoked with a little apple wood at about 230ºF for almost two hours.

Then, later with the smoker plate removed, the same kettle was fired up again for one-pound-pork rib chops

a few minutes direct to sear then off to the side to finish to an internal temp of 143º

removed then rested foil-tented for ten minutes or so.

served with Dean's potatoes and crisp steamed green beans.

The Potatoes were PERFECT! The Beans were Boss!! and the Chops were very tasty!!!

I need to eat more kielbasa. Lookin' great Mr. Lampe. Those pork chops don't look bad at all either!

I saw the double eagle too, but fortunately I didn't watch Lefty fall on his sword with his triple bogey.

Was good to see Bubba win the Masters. Amazing recovery shot on the second playoff hole.
