Dry brined then rubbed chicken, in the rain

Started to cook and it started to rain. Almost at my threshold of use the oven as its 57° degrees and cold rain as I grill, indirect with an oak chunk.

Used this rub, sans the sage:

Zucchini fritters, I had to look that one up. These are going on my list!
Lighter than potatoes and somewhat healthier too. No need to deep fry. I used a CI and a little oil to get them to cook/brown. Just drain the moisture out of your shreds and they’ll hold together nicely. I used panko instead of flour or breadcrumbs. Panko has a better flavor, IMO. They were a hit tonight. It’s all my daughter had as she didn’t want chicken. She prefers boneless chicken. Oh well.
