Dried Beef Recipe Request

Every Friday I buy breakfast and this morning being no different, I decided on some good o'l fashion SOS. The new breakfast place near work has me a little disappointed and I am thinking I can do much better. Do you have a recipe for the dried beef? Google only shows recipes for the creamed chipped beef on toast part which I can figure out, but the actual drying beef part from scratch is what I am looking to do!

Anybody??
 
I'm guessing it's similar to doing jerky, just sliced super thin?
When we do SOS we use those small bags of beef from Aldi. Yea I know not very original, but it's cheap.;)

Maybe use a dehydrator?
Bet a tri tip, smoke cooked to medium rare, wafer thin sliced, and then dried would make great SOS.
