Double Schmoked Shank Ham.

A beautiful day yesterday so with catchin up on the yard work and watchin some football I went with something easy & cheap.
Started with a fully cooked hickory smoked shank which I left on the counter for a few hrs to take the chill off.

Rubbed with some Three Little Pigs and McCormick Smoke House Maple.

On the WSM with some RO lump and Pecan. Empty foiled pan and my target temp was 275.

About 3 hrs later I made a glaze of crushed pineapple, apricot preserves, brown sugar, whole grain mustard, cinnamon, and a health dose of this guy.

I said this was easy.;) So finished up with some GFS frozen corn and some GFS instant potato pearls which are really good IMO. Added some tube honey butter biscuits which hit the spot.
