Dome Temp vs Maverick Probe temp

I am doing my first pork butt on a new Weber Summit Charcoal Grill
The dome thermometer is in the smoking zone - about 225* but the Maverick (in the front of the grate) is telling me it is about 250-260*
I moved from a 22 1/2 Weber kettle and I used to have the Maverick set so I could snooze and get the alarm if the temp went up
I don't know what is right
Advice?
 
Your temping in two different locations so you should get two different readings. Pick one and stick with it.

which one?

Never used a WSCG so can't comment on where is the best location, but on my Webys I use the top vent. 35 deg is minimal difference, so if you trust your mav and have the alarms set, go with that.

I would think that the Summit would work just like the kettles - the meat is cooking at the grate so go with grate temperature. You can easily do the boiling water check on your Maverick.

It's also a trial by fire or error. You have a new piece of equipment that hasn't been seasoned yet, so you could be all over the place as far as temps. Give it time and relax and enjoy the ride.
