If you want some of the best grilled steaks you will ever eat, salt them heavily with kosher salt and crushed garlic and let them sit for about 20 minutes. Then, wash off all the salt and garlic, pat them dry with paper towels, and cover them with fresh ground black pepper. Then, grill them with high heat.
Tasty, tasty steaks. The salt removes some moisture, which is a good thing since water is a flavor killer, but then it pulls flavor back inside.
