OK so those beans were sucking all the heat out of the smoker.
1130pm - 1pm at 250* and butts were sitting at 167*.
Put the beans in the oven at 350 and butts are starting to climb now, up to 176.
So lesson learned for me next time will take them off after 6 hours or so.

this was the most challenging cook i've had. those beans sucked the life out of my smoker. after putting beans in oven, ran out of fuel at about 2pm with meat sitting at 176* after 15 hours at around 250*. tried to add KB and handle broke again. ok, time to get that compression latch and drill out CB SS door to a 5/8 hole, so about $18 for latch and $42 for a uni-bit. wired door shut after adding coals and FINALLY the butts finished...

Plated picture looks delicious! I have also never heard of beans acting as a
heat sink. First time for everything.

well you can have a gallon of water in the water pan or a gallon of beans in a foil pan. the beans in sauce are probably 90% water so my guess is same diff. i can tell you my stall with the beans in was 3+ hours, longest i've ever had...

Alan, like you I've learned so much in such a short time from this forum even my so called failures are better then what I did before. Excellent multi level cook, looks really great.
