Ok, I have posted a bit and should put something here. Looking to retire soon or early. Not from Kansas but job relocated 21 years ago from Indiana. Anyway been grilling for many moons. In the 60's and 70's my dad always used a little Smokey Joe. I got a free grill (propane) some 25 years ago and had one other. About 4 years ago, I had been thinking to go back to more traditional grilling, smoking. One day I left the a lighter in the propane grill after firing it up and it caught on fire. A plastic melted mess. I said the hell with this and went and got a Weber Performer. I also now have a 22 WSM which I got used about a year and 1/2 ago.

I am also into Cast Iron cooking. I think my wife thinks that I am crazy as I have taken over the kitchen. At the same time .. no complaints..

Love the bread photo! I'm fond of the no-knead process. The bottom of my loaves get a little overdone, but I can't complain too much.

Thanks... Yes, no-knead is good. Same here with the bottom and sometimes the crust is a little too dense. Always experimenting and constant learning process.
