Crazy Temp Fluctuations on My Baby Back Rib Smoke

I started three slabs of ribs about an hour ago and got temp up to about 240 in the smoker. I dialed the vents back a bit to slow the climb and next thing I know (like 5 minutes later) its down to 200. I figured I was starving the fire so I opened them back up just a touch and now it's going through this cycle of climbing to 215 or so and then dropping to 200 and climbing again. It is getting a little breezier than when I started, so I'm wondering if I should close the two vents closest to the direction of the wind and open the one on the back side more to try and lower the effect (if any) of the light breeze I'm getting every few minutes.

I only lit maybe 1/3 to 1/2 a chimney and then filled the ring with unlit lump with the center only having one layer so I could pour the lit in. I finally stabilized the heat at 255 for the majority of the cook, but it did dip again later so total cook time was 6.5 hours.

In the end they tasted great, a noticeable smoke ring and a nice clean bite without pulling the whole piece of meat off the bone so I was happy with them.

Sounds like a good save. Nice job.

Was there anything different with the lump you were using ?
If it was a wind issue only, would have expected high temperature issues rather than your lower temperature issue.
