couple of birds in the rain

Decided to try a couple of birds at a higher temp on the wsm today. It was suppose to be over cast with a slight chance of showers later in the evening. Yeah right, thar she blows. Because of Mother Natures sudden mood swing, I never got the temps above 315, they hung in around 275 most of the cook. Took an extra 30 minutes so it wasn't that bad just I'm a fair weather cook and this was new to me. Figure when your grandaughter ask's ya to "make it that way from now on" it was acceptable. Did the dry brine/cure thing,it really surprised me the way it worked. The trick is to leave it breast side down while it sits in the fridge over night.

Keep in mind keeping the cooker under the porch umbrella, even with a breeze you will probably end up with smoke getting up under it and coating the underside.
 
Thanks ya'll. Yeh Len, I thought the thing was going to collapse a couple of times due to the water building up on the top sides at the frame. I didn't have it pulled tight and hooked at the bottom and because the tent is about 10-11yrs old it wouldn't have helped much,not to mention it also had a couple of drips else were.The wifes family has borrowed it on several occasions as well and you know how that goes. The thought had crossed my mind about just draging the smoker into the garage but didn't think I could pull it off,even considered firing it up in there once or twice. There are 2 windows as well as the large roll up door and a regular entry door not to mention the window fan and 2 pedestal fans I have in there. Would that have been a bad idea?
 
I wouldn't put it in the garage. As I said, all that smoke, regardless of venting, may just go up/into the house/etc.

And you'll never lift it once it's going. The unit (empty weighs, what 25 lb? no idea), chicks weighs 9 lb guess (forget it if you're doing butts), the charcoal another 12-14lb, the water is 11 lb per gallon.

You have to hold it at arms length so you don't suffocate or suffer mild warmth, you might stumble, etc etc

Never try to move it once the cook is started.

Leave it outside and use an old umbrella/stand that you don't mind getting gunked up.

I thought I had a better pic but you can see the umbrella stand between the grill & the WSM. It's about a 4' umbrella that would normally be inserted in the centre of a patio table.

It was really raining that day and the brolly was more to keep me dry than the smoker. But it did both.
 
yeh I really didn't want to move it,I could see it becoming a disaster. The garage isn't attatched to the house,it sits back,I took the pics from the door way. it's actually a 3 car garage but they listed it as a 2 car with work shop,all open,ridge vent down the middle and the dbl door,an entry door and 2 window.I thought maybe if I set the wsm in front of the window with the fan acting as an exhaust fan.My wife already told me definately not on the screened porch and it has a 12' ceiling with a fan. Just a thought anyway.
