Costco Butts

I buy the two pack boneless cryo butts from Costco. For those who use the Costco butts do you trim and remove the false cap?

I have trimmed and removed the false caps on both attempts, using the Mr Brown recipe. Trim or not trim?

never trim! That meat under the false cap is like divine ambrosia after it's smoked. You can discard the fat under that meat when you're pulling the pork.
 
I never trim butts and I cook fat cap up.
You can always leave the fat out when you pull it. I buy the Sam's 2pack butts which are prolly the same as the CostCo's.
 
I trim them a little bit. Just to remove the big chunks of fat, and I never trim all the way to red meat. I leave about a 1/4" of fat. I always tie them so they kinda look like a big roast. The butts that I have bought from Costco look like they were butchered with a chainsaw

but they were always tasty!
 
i'm still out on that. i had to get fully trimmed butt cuz nothing else was available. seemed to have more taste from the rub and smoke. so i'm still playing around to see.
 
I'm with Tim on this one.
Did trim at one time, now it's the whole dang thing, and the fc on the grill.
 
I have not trimmed any fat caps off the Butts I buy from Costco, imo the flavor was great and I prefer to not tamper with something that taste soooo good.

For tying, I bought some silicone "rubber" bands at a food supply store. They work great, and they are reusable time and time again. Much easier than twine!

I usually trim because there's enough fat and tissue in the meat that it doesn't need that extra layer. Never had a complaint. Nice and juicy.
 
I just did a 15.5 pound pack (turned out to be two, I thought it was one) of boneless.

I trimmed a bunch of the fat, but left a good amount. It cooked for about 8.5 hours and was pretty **** good.
