Corned beef flat

I was at the supermarket and saw they had some corned beef flats. Has anyone done one on a WSM or kettle? Is this the type of meat that can be cooked this way?

I enjoy corned beef, but think I have only had it boiled.

Thanks, and have a good Labor Day everyone

Great, thank you for the links.

I followed your lead and have soaked and rinsed a few times, makes sense to me given the high salt content.

I have a 3.5lb piece I'm working with, and I'm very much looking forward to it.

Don't hesitate to try Chris's recipe for "real" pastrami also. It's awesome! Right out of a New York Deli. :)

I just did the "faux Pastrami" for a family get together yesterday and it was a big hit. I used oak smoke wood per Chris's recommendation.
